Marcella Hazan's Macerated Orange Slices
Fresh orange slices are macerated with sugar and lemon juice, then chilled until sweet, juicy, and refreshing.

- 6 oranges
- 5 tbsp granulated sugar
- 1 lemon
Using a sharp paring knife, peel 4 of the 6 oranges, removing as much of the white pith as possible.
Cut the peeled oranges into slices less than ½ inch thick. Pick out any seeds.
Place the oranges into a deep platter or shallow serving bowl. Zest the lemon and sprinkle all of the zest as well as the sugar onto the oranges.
Squeeze the remaining two oranges and ½ the lemon. Add the juice to the platter.
Toss gently to not break up the orange slices.
Cover with plastic wrap and place into the refrigerator for at least four hours, or overnight.
Serve chilled after turning them in the juice. Garnish with mint (optional)
To give them a more celebratory accent, add 2 tbsp Cointreau to the platter and toss gently right before serving.
