Marcella Hazan's Macerated Orange Slices

Fresh orange slices are macerated with sugar and lemon juice, then chilled until sweet, juicy, and refreshing.

Ingredients
  

  • 6 oranges
  • 5 tbsp granulated sugar
  • 1 lemon

Instructions
 

  • Using a sharp paring knife, peel 4 of the 6 oranges, removing as much of the white pith as possible.
  • Cut the peeled oranges into slices less than ½ inch thick. Pick out any seeds.
  • Place the oranges into a deep platter or shallow serving bowl. Zest the lemon and sprinkle all of the zest as well as the sugar onto the oranges.
  • Squeeze the remaining two oranges and ½ the lemon. Add the juice to the platter.
  • Toss gently to not break up the orange slices.
  • Cover with plastic wrap and place into the refrigerator for at least four hours, or overnight.
  • Serve chilled after turning them in the juice. Garnish with mint (optional)
  • To give them a more celebratory accent, add 2 tbsp Cointreau to the platter and toss gently right before serving.
